Mmmm .. muesli

This is the breakfast I would most preferably have every morning. Thick natural yogurt (Turkish 10%) with homemade muesli, fruit salad and a spoonful of honey. Delicious.

For the basic muesli you need:

1 L oatmeal
1 dl bran or similar
1 dl linseed (crushed)
2 dl sunflower seeds
2 dl nuts
2 dl water
2 tbls oil (or butter)
2 tsp salt
1 dl dried fruit

This is just a basic recipe. You can alternate the ingredients according to what you like, or have available. Take what fruit you like. I often use only banana flakes as the family likes them. You can use dried apricot, raisins .. my personal favourite is dried fig. I often use almonds as I love the taste of roasted almonds. But, for instance, my mother and sister I know always buy a luxury nut mix for their muesli .. I am a bit more stingy.

To make the muesli: roast the sunflower seeds lightly on a dry pan. Mix the seeds with other dry ingredients. NOT the fruit. Heat up the water. Add salt and oil, mix until salt has dissolved. Pour water over the dry ingredients and mix into “a cruble”. I think it is easiest done with fingertips. Spread the crumble over a baking tray. Roast in the oven at 175-200 C for about 30 minutes. Turn the muesli every 10 minutes or so to let it roast evenly. Add dried fruit after you have taken the muesli from the heat. Let it cool and store in an air-tight container.

Happy breakfast!
